Comfort food classic - family-friendly, freezer-friendly, and full of goodness.
Ingredients:
- 1kg Maris Piper potatoes, peeled + halved
- 400ml milk (plus a splash for mash)
- 25g butter (plus a knob for mash)
- 25g plain flour
- 4 spring onions, finely sliced
- 1 pack fish pie mix (cod, salmon, smoked haddock – approx. 320–400g)
- 1 tsp Dijon or English mustard
- ½ pack or small bunch of chives, finely snipped
- Handful frozen sweetcorn
- Handful frozen petits pois (baby peas)
- Handful grated cheddar cheese
Simplified Method:
- Preheat oven to 200°C / 180°C fan / Gas 6.
- Boil potatoes until tender. Mash with splash of milk + knob of butter. Season.
- In another pan, melt 25g butter with flour + spring onions. Stir gently (1–2 mins).
- Slowly whisk in 400ml milk. Stir until thickened (3–4 mins).
- Take off heat. Add fish mix, mustard, chives, sweetcorn + peas.
- Spoon filling into ovenproof dish or ramekins.
- Top with mash, sprinkle cheddar on top.
- Bake 20–25 mins until golden and bubbling.
🧊 Can also be frozen before baking.
To Serve With:
- Steamed green beans or broccoli
- Baked carrots or peas on the side
- For toddlers: soft cooked veg fingers or sweet potato mash
