- 4 skinless chicken breasts (or thighs/drumsticks), cut into chunks
- 2 tsp cornflour
- 1 onion, diced
- 2 tbsp rapeseed oil
- 1 garlic clove, crushed
- 2 tsp curry powder
- 1 tsp turmeric
- ½ tsp ground ginger
- Pinch of sugar
- 400ml chicken stock
- 1 tsp soy sauce
- Handful of frozen peas
- Cooked rice (to serve)
- Frozen chips
- Prawn crackers
Simplified Method:
- Coat chicken in cornflour and season well. Set aside.
- Soften onion in 1 tbsp oil over medium heat (5–6 mins).
- Add garlic, curry powder, turmeric, ginger, and a pinch of sugar. Cook 1 min.
- Pour in chicken stock + soy sauce. Simmer for 20 mins.
- Blitz sauce until smooth (careful if hot!).
- Brown chicken in remaining oil in the same pan.
- Add sauce and frozen peas. Simmer 5 mins. Thin with water if needed.
- Serve with rice or chips and prawn crackers. enjoy!
