Chinese Chicken Curry

  • 4 skinless chicken breasts (or thighs/drumsticks), cut into chunks
  • 2 tsp cornflour
  • 1 onion, diced
  • 2 tbsp rapeseed oil
  • 1 garlic clove, crushed
  • 2 tsp curry powder
  • 1 tsp turmeric
  • ½ tsp ground ginger
  • Pinch of sugar
  • 400ml chicken stock
  • 1 tsp soy sauce
  • Handful of frozen peas
  • Cooked rice (to serve)
  • Frozen chips
  • Prawn crackers
    Simplified Method:
     
    • Coat chicken in cornflour and season well. Set aside.
    • Soften onion in 1 tbsp oil over medium heat (5–6 mins).
    • Add garlic, curry powder, turmeric, ginger, and a pinch of sugar. Cook 1 min.
    • Pour in chicken stock + soy sauce. Simmer for 20 mins.
    • Blitz sauce until smooth (careful if hot!).
    • Brown chicken in remaining oil in the same pan.
    • Add sauce and frozen peas. Simmer 5 mins. Thin with water if needed.
    • Serve with rice or chips and prawn crackers. enjoy!
