Creamy, cheesy, and family-approved - a proper midweek winner.
✨ A Favourite of mine✨
Ingredients:
- 4 tbsp olive oil
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- ¼ tsp chilli flakes
- 2 x 400g cans chopped tomatoes
- 1 tsp caster sugar
- 6 tbsp mascarpone
- 4 skinless chicken breasts, sliced into strips
- 300g penne pasta
- 70g mature cheddar, grated
- 50g mozzarella, grated
- ½ small bunch parsley, finely chopped
Simplified Method:
- Fry onion in 2 tbsp oil for 10–12 mins. Add garlic + chilli flakes. Cook 1 min.
- Add tomatoes and sugar. Season, then simmer uncovered for 20 mins until thickened. Stir in mascarpone.
- In another pan, fry chicken in 1 tbsp oil for 5–7 mins until cooked through.
- Preheat oven to 220°C / 200°C fan / Gas 7.
- Cook pasta, then drain and toss with remaining 1 tbsp oil.
- Combine pasta, chicken, and sauce in an ovenproof dish.
- Top with cheddar, mozzarella, and parsley.
- Bake 20 mins until golden and bubbling.
To Serve With:
- Garlic bread or crusty rolls
- Green salad or steamed broccoli
- Roasted veg or peas for the kids
